Starry-eyed Sweetcorn & Squash Stars – Annabel Karmel X Green Giant

  • 200g butternut squash, peeled and grated
  • 1 tbsp chives, chopped.
  • 100g Green Giant sweetcorn, drained
  • 30g Parmesan cheese, grated
  • 50g Cheddar cheese, grated
  • 4 tbsp self-rising flour
  • 2 large eggs, beaten


  1. Preheat the two 180C Fan. Line a baking sheet with baking paper.
  2. Put the squash into a clean tea towel. Squeeze out as much liquid as possible and place into a bowl.
  3. Measure the squash, chives, sweetcorn, Parmesan, Cheddar cheese, flour and eggs into a bowl. Beat together.
  4. Place a star cookie cutter onto the baking sheet. Fill the cutter with the mixture. Repeat with the remaining mixture.
  5. Bake in the oven for 15 to 18 minutes until firm and lightly golden.
